Björn Frantzén is Chef and Founder of Frantzen, a top Swedish restaurant with three Michelin stars. Curiously, he’s also a former professional footballer, having played for Swedish team AIK between 1992 and 1996.
Frantzén opened Frantzén/Lindeberg in 2008, securing two Michelin stars within the first two years.The restaurant has featured in the top 15 on the World’s Best 50 Restaurants.
The chef is someone preoccupied with bringing international acclaim to raw Swedish products. This is reflected in his restaurant, which serves up a hybrid of Nordic and Asian cuisine. There are dishes like Japanese egg custard with pork broth, and ‘Fattiga Riddare’, a fried toast with truffle, cheese and a balsamic vinegar aged for 100 years. There’s also a clear theatrical aspect: as people work their way through the dining menu, they also work their way through various rooms across three floors of the 19th Century townhouse restaurant.
Frantzén’s restaurant group has included one of the few wine bars in Stockholm, restaurants in Hong Kong, and Zen, in Singapore, which mimics the “3 floor eating experience” from his flagship restaurant.
